Description

A buttery graham cracker crust, a gooey caramel layer, crushed Butterfinger candy, and a smooth chocolate topping come together in these irresistible dessert bars. They look like a bakery treat, but come together with simple steps and a little patience while they set in the fridge.

For the Base

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar

For the Caramel Layer

  • 1 cup caramel bits or soft caramels, unwrapped
  • 2 tablespoons heavy cream

For the Butterfinger Layer

  • 1 cup crushed Butterfinger candy bars (about 34 bars)

For the Chocolate Topping

  • 1 ½ cups semi-sweet chocolate chips
  • 1 tablespoon unsalted butter

Optional Garnish

 

  • Extra crushed Butterfinger pieces


Instructions

1. Preheat the Oven and Prep the Pan Set your oven to preheat at 350°F (175°C). While it heats, lightly grease an 8×8-inch baking pan, then line it with a sheet of parchment paper, allowing the paper to hang over two opposite sides of the pan. This overhang will make it much easier to lift the finished bars out cleanly once they’ve set.

2. Mix and Press the Crust In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir thoroughly with a spoon or spatula until every bit of the crumb mixture looks evenly moistened by the butter, with no dry, powdery patches remaining. Transfer the mixture into your prepared pan, then use the bottom of a measuring cup or the flat side of a spatula to press it firmly and evenly across the bottom of the pan, making sure the layer is compact and level from edge to edge.

3. Bake the Crust Place the pan in the preheated oven and bake for 8 to 10 minutes, watching for the edges of the crust to turn a light golden color. Once you see that golden edge forming, remove the pan from the oven and set it aside on a cooling rack, allowing the crust to cool slightly before moving on to the next layer. The crust should still be warm, but no longer piping hot, when you add the caramel.

4. Melt the Caramel While the crust cools, place the caramel bits (or unwrapped soft caramels) and the heavy cream together in a microwave-safe bowl. Microwave the mixture in 30-second intervals, pausing to stir thoroughly after each interval, until the caramel has fully melted and the mixture looks smooth, glossy, and free of lumps. This gradual melting process helps prevent the caramel from scorching or seizing up.

5. Pour the Caramel Layer Pour the melted caramel directly over the slightly cooled graham cracker crust. Using a spatula, spread the caramel out evenly, working it into the corners of the pan so the entire surface of the crust is covered in a smooth, even layer.

6. Add the Crushed Butterfinger Layer Sprinkle the crushed Butterfinger candy evenly over the top of the caramel layer, distributing the pieces so they cover the surface as consistently as possible. Once scattered, gently press down on the candy pieces with your fingertips or the back of a spoon, just enough to help them adhere to the sticky caramel layer beneath them without pushing them all the way through.

7. Melt the Chocolate Topping In a separate microwave-safe bowl, combine the semi-sweet chocolate chips and the tablespoon of butter. Microwave in 30-second intervals, stirring well after each one, until the chocolate is completely melted and the mixture looks smooth and glossy with no remaining lumps of unmelted chocolate.

8. Pour the Chocolate Layer Pour the melted chocolate mixture over the Butterfinger layer, then use a spatula to spread it out evenly across the entire surface of the pan, making sure it reaches all the edges and fully covers the crushed candy layer beneath it.

9. Cool and Set the Bars Let the assembled bars sit at room temperature for about 30 minutes, giving the chocolate layer a chance to begin firming up before you move the pan. After this initial rest, transfer the pan to the refrigerator and let the bars chill for approximately 2 hours, or until they are completely set all the way through and firm to the touch.

10. Lift, Slice, and Garnish Once fully set, use the parchment paper overhang to lift the entire block of bars out of the pan in one piece, transferring it to a cutting board. Using a sharp knife, slice the block into individual squares or rectangles, wiping the blade clean between cuts for the neatest edges. If desired, sprinkle a few extra pieces of crushed Butterfinger candy over the top of the bars just before serving for added crunch and visual appeal.

 

11. Store Properly Transfer any leftover bars into an airtight container. They will keep well at room temperature for up to 5 days, or you can store them in the refrigerator for up to a week if you prefer a firmer, chilled texture.
