Banana Cake With Brown Butter Cream Cheese Icing

Ingredients
  

  • - 1 ½ cups mashed bananas
  • - 2 teaspoons lemon juice
  • - 3 cups all-purpose flour
  • - 1 ½ teaspoons baking soda
  • - ½ teaspoon salt
  • - 2  cups white sugar
  • - ¾ cup butter
  • - 3 eggs
  • - 1 tablespoon vanilla extract
  • - ½ teaspoon almond extract
  • - 1 ½ cups buttermilk
  • - 1 batch brown butter cream cheese icing

Method
 

  1. Preheat your oven to 275°F.
  2. Mash bananas with lemon juice and set aside.
  3. Mix flour, baking soda, and salt in a separate bowl.
  4. Cream sugar and butter until pale and fluffy. Add eggs one at a time, then vanilla.
  5. Slowly add dry ingredients and buttermilk to the creamed mixture, alternating between the two.
  6. Gently fold in mashed bananas, then pour into a greased 9x13 pan.
  7. Bake for around 1 to 1.5 hours, or until a toothpick comes out clean.
  8. Let the cake cool, or pop it in the freezer for extra moisture.
  9. Frost generously with brown butter cream cheese icing and dig in!
