Ingredients
For the Sweet Potato
- 2 pounds sweet potato (2 to 3 potatoes), cut into ½-inch cubes
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon onion powder
- ½ teaspoon garlic powder

- 4 Roma tomatoes, deseeded and diced

Instructions
1. Preheat the Oven and Season the Sweet Potato Set your oven to preheat at 425°F (200°C). While it heats, place the cubed sweet potato into a large mixing bowl. 2. Roast the Sweet Potato Transfer the seasoned sweet potato cubes to a large sheet pan, spreading them out into a single, even layer. Take care to leave a small amount of space between the individual cubes rather than piling them together — overcrowding the pan traps steam and prevents the edges from caramelizing properly. Place the pan in the preheated oven and roast for 30 to 35 minutes total. Halfway through the roasting time, remove the pan and use a spatula to stir and flip the cubes, redistributing them back into a single layer before returning the pan to the oven. The sweet potatoes are done once the edges have turned deeply golden and slightly crisp, while the centers remain tender.
3. Brown the Ground Beef While the sweet potatoes roast, place a large skillet over medium heat and add the ground beef directly to the dry pan. Using a spatula, break the meat apart into smaller crumbles as it begins to cook. Once the beef starts browning, sprinkle in the onion powder, garlic powder, paprika, salt, and pepper, stirring to distribute the seasoning evenly throughout the meat. Continue cooking, breaking up any larger clumps as you go, until the beef is fully browned with no pink remaining, which typically takes about 8 to 10 minutes total. If your beef released a noticeable amount of fat during cooking, carefully drain it off before moving on to the next step.
4. Make the Sauce In a small mixing bowl, combine the mayonnaise, ketchup, finely chopped sweet pickle relish, white vinegar, and a pinch of kosher salt. Stir everything together thoroughly with a spoon until the mixture is completely smooth and uniform in color, with no streaks of any single ingredient visible. If you have a few extra minutes, let the finished sauce rest in the refrigerator while the sweet potatoes finish roasting — this short resting period allows the flavors to meld together and noticeably improves the overall taste.
5. Assemble the Burger Bowls Once both the sweet potato and ground beef are fully cooked, it’s time to build your bowls. Layer on the shredded cheese, followed by the shredded lettuce, diced Roma tomatoes, diced dill pickles, and diced white onion, arranging the toppings however you’d like across the surface of the bowl. Finish each bowl with a generous drizzle of the prepared sauce over the top, then serve immediately while the sweet potato and beef are still warm.
