For the Cookies

- 2 1/3 cups all-purpose flour
- 1 teaspoon baking soda

For the Maple Icing
- 1/2 cup confectioners’ sugar, sifted until free of lumps
- 3 tablespoons pure maple syrup
- 1 tablespoon unsalted butter, melted and cooled to room temperature
- 1/4 teaspoon maple extract
- Pinch of kosher salt
Instructions
- Set your oven to preheat at 350°F (175°C). While it heats, line two large baking sheets with parchment paper so they’re ready the moment your dough is scooped.
- In a medium mixing bowl, combine the all-purpose flour, baking soda, and kosher salt. Whisk them together thoroughly so the baking soda and salt are distributed evenly through the flour — this step matters more than it seems, since uneven distribution can cause some cookies to spread differently than others.
- In the bowl of a stand mixer fitted with the paddle attachment, add the softened unsalted butter and the packed light brown sugar. Beat on medium speed for 1 to 2 minutes, until the mixture turns pale, light, and creamy in texture.
- Add the room-temperature egg to the butter and sugar mixture. Continue beating just until the egg is fully absorbed and no streaks remain visible.
- With the mixer still running, pour in the pure maple syrup, vanilla extract, and maple extract. Beat on medium-high speed until everything is evenly combined, pausing as needed to scrape down the sides and bottom of the bowl so no unmixed pockets remain.
- Add the flour mixture to the wet ingredients in the mixing bowl. Mix on low speed only until the dry ingredients are just incorporated and no streaks of flour remain visible. Stop as soon as this point is reached — mixing longer than necessary can make the baked cookies denser than intended.
- Using a 2-tablespoon cookie scoop, portion the dough into equal amounts. Roll each portion gently between your palms into a smooth ball, then arrange the balls on your prepared baking sheets, spacing them approximately 2 inches apart to allow room for spreading.
- Bake the cookies for 8 to 9 minutes. You’re looking for the edges to turn a light golden-brown color while the centers still appear soft and slightly underbaked — this is exactly what you want for a soft finished texture.
- Once out of the oven, leave the cookies undisturbed on the hot baking sheets for 5 minutes. This resting period allows the soft centers to finish setting through residual heat without becoming overbaked. After resting, carefully transfer the cookies to a wire cooling rack and allow them to cool completely before icing.
- While the cookies finish cooling, prepare the icing. In a medium bowl, combine the sifted confectioners’ sugar, pure maple syrup, melted and cooled butter, maple extract, and a pinch of kosher salt.
- Stir the icing mixture until completely smooth, with a consistency that’s thick but still pourable. If needed, add the maple syrup gradually to fine-tune the thickness to your preference.
- Once the cookies have cooled fully, drizzle the maple icing evenly across the top of each one.
- Let the icing set completely before serving or storing the cookies, so it firms up into a smooth, non-sticky layer.

- For the smoothest, most even dough, make sure both the butter and egg are close to 70°F before you begin mixing.
- Grade A amber or dark maple syrup delivers a noticeably fuller maple flavor than lighter syrup varieties.
