Instructions
- Prepare the Oven and Pan
- Preheat your oven to 350°F. Thoroughly grease a six-cavity donut pan with cooking spray or oil to ensure easy release after baking.
- Make the Batter
- In a medium mixing bowl, combine almond flour, protein powder, sweetener, baking powder, baking soda, and salt. Add egg, almond milk, lemon juice, lemon zest, melted coconut oil, and vanilla extract.
- Using an electric mixer, blend everything together until the batter becomes smooth and fully combined. Pause occasionally to scrape down the sides of the bowl so all ingredients mix evenly.
- Fill the Donut Pan
- Transfer the batter into the prepared donut pan. You can spoon the batter in carefully or pipe it in for cleaner filling. Spread evenly across all cavities.
- Bake the Donuts
- Place the pan into the oven and bake for approximately 15 to 17 minutes. The donuts should look lightly golden and spring back slightly when touched. Insert a toothpick into the center to confirm doneness.
- Avoid baking too long to keep the texture soft and moist.
- Prepare the Lemon Glaze
- While the donuts bake, add protein powder, almond milk, yogurt, lemon juice, lemon zest, sweetener, and vanilla extract to a bowl. Whisk until smooth and creamy.
- If the glaze feels too thick, add a splash of almond milk. If too thin, mix in a little extra protein powder.
- Cool the Donuts
- Remove the baked donuts from the oven and allow them to rest in the pan for several minutes. Carefully transfer them to a wire rack and let them cool completely before glazing.
- Add the Glaze
- Use a spoon to drizzle or spread the lemon glaze over each donut. Finish with additional lemon zest if desired
