Description

These Lemon Vanilla Protein Donuts with Glaze are soft, citrusy, and packed with protein. Made with almond flour and topped with a creamy lemon glaze, they’re a healthier option for breakfast, snacks, or dessert.

Ingredients

Donut Batter

  • Almond flour
  • Monk fruit sweetener
  • Vanilla protein powder
  • Egg
  • Unsweetened almond milk
  • Lemon juice
  • Lemon zest
  • Melted coconut oil
  • Baking powder
  • Baking soda
  • Vanilla extract
  • Salt

Lemon Glaze

  • Vanilla protein powder
  • Almond milk
  • Dairy-free yogurt or Greek yogurt
  • Monk fruit syrup or honey
  • Lemon juice
  • Lemon zest
  • Vanilla extract

Instructions

  1. Prepare the Oven and Pan
    • Preheat your oven to 350°F. Thoroughly grease a six-cavity donut pan with cooking spray or oil to ensure easy release after baking.
  2. Make the Batter
    • In a medium mixing bowl, combine almond flour, protein powder, sweetener, baking powder, baking soda, and salt. Add egg, almond milk, lemon juice, lemon zest, melted coconut oil, and vanilla extract.
    • Using an electric mixer, blend everything together until the batter becomes smooth and fully combined. Pause occasionally to scrape down the sides of the bowl so all ingredients mix evenly.
  3. Fill the Donut Pan
    • Transfer the batter into the prepared donut pan. You can spoon the batter in carefully or pipe it in for cleaner filling. Spread evenly across all cavities.
  4. Bake the Donuts
    • Place the pan into the oven and bake for approximately 15 to 17 minutes. The donuts should look lightly golden and spring back slightly when touched. Insert a toothpick into the center to confirm doneness.
    • Avoid baking too long to keep the texture soft and moist.
  5. Prepare the Lemon Glaze
    • While the donuts bake, add protein powder, almond milk, yogurt, lemon juice, lemon zest, sweetener, and vanilla extract to a bowl. Whisk until smooth and creamy.
    • If the glaze feels too thick, add a splash of almond milk. If too thin, mix in a little extra protein powder.
  6. Cool the Donuts
    • Remove the baked donuts from the oven and allow them to rest in the pan for several minutes. Carefully transfer them to a wire rack and let them cool completely before glazing.
  7. Add the Glaze
    • Use a spoon to drizzle or spread the lemon glaze over each donut. Finish with additional lemon zest if desired

Notes

  • Use plant-based protein powder for dairy-free donuts
  • Add extra almond milk if batter feels overly thick
  • Store refrigerated for freshness
