Instructions
- Prepare the fish properly
- Use paper towels to press and remove any moisture from the fillets. Dry fish ensures better coating adhesion and crisp texture.
- Set up coating mixtures
- In one bowl, combine flour with salt and pepper.
- In another bowl, whisk eggs with water, cheese, garlic powder, onion powder, and parsley until smooth.
- Heat cooking fats
- Place a large skillet over medium-high heat. Add butter and olive oil, allowing them to heat until shimmering but not smoking.
- Dredge and coat fillets
- Lightly coat each fillet in seasoned flour. Shake off excess.
- Dip into egg mixture, ensuring full coverage.
- Cook the fish
- Place fillets into the hot skillet carefully. Cook for about 2–3 minutes on each side until golden and lightly crisp.
- Transfer for finishing
- Move cooked fillets onto a baking dish.
- Finish in oven
- Preheat oven to 350°F. Place dish in oven for about 5 minutes to finish cooking evenly.
- Build the sauce
- In a saucepan, melt butter over medium heat. Add garlic and cook briefly until fragrant.
- Pour in chicken stock, white wine, and lemon juice. Bring to a gentle simmer.
- Thicken the sauce
- Add butter mixed with flour gradually while whisking. Continue stirring until sauce thickens.
- Adjust flavor
- Taste and add salt or pepper if needed. Stir in fresh parsley at the end.
