Description

This Flounder Francaise delivers a crisp, golden exterior with a bright lemon butter sauce. It’s quick to prepare and perfect for an elegant yet simple dinner.

Ingredients

Scale

Fish

  • 16 oz flounder fillets (about 4 pieces, evenly sliced)

Coating

  • Onion powder
  • Small amount of flour
  • Eggs, lightly beaten
  • Fresh parsley, finely chopped
  • Grated Romano cheese
  • Salt
  • Additional flour for dredging
  • Garlic powder
  • Black pepper
  • Water

Sauce

  • Finely minced shallots
  • Fresh lemon juice
  • Flour for thickening
  • Chicken stock
  • Butter
  • Olive oil
  • Fresh parsley
  • Dry white wine

Instructions

  1. Prepare the fish properly
    • Use paper towels to press and remove any moisture from the fillets. Dry fish ensures better coating adhesion and crisp texture.
  2. Set up coating mixtures
    • In one bowl, combine flour with salt and pepper.
    • In another bowl, whisk eggs with water, cheese, garlic powder, onion powder, and parsley until smooth.
  3. Heat cooking fats
    • Place a large skillet over medium-high heat. Add butter and olive oil, allowing them to heat until shimmering but not smoking.
  4. Dredge and coat fillets
    • Lightly coat each fillet in seasoned flour. Shake off excess.
    • Dip into egg mixture, ensuring full coverage.
  5. Cook the fish
    • Place fillets into the hot skillet carefully. Cook for about 2–3 minutes on each side until golden and lightly crisp.
  6. Transfer for finishing
    • Move cooked fillets onto a baking dish.
  7. Finish in oven
    • Preheat oven to 350°F. Place dish in oven for about 5 minutes to finish cooking evenly.
  8. Build the sauce
    • In a saucepan, melt butter over medium heat. Add garlic and cook briefly until fragrant.
    • Pour in chicken stock, white wine, and lemon juice. Bring to a gentle simmer.
  9. Thicken the sauce
    • Add butter mixed with flour gradually while whisking. Continue stirring until sauce thickens.
  10. Adjust flavor
    • Taste and add salt or pepper if needed. Stir in fresh parsley at the end.
  11. Serve immediately
    • Remove fish from oven. Plate fillets and spoon warm lemon butter sauce over each piece.
