Ingredients
Scale
- ½ cup melted butter
- 4 cups cooked shredded chicken
- 1 bag frozen mixed vegetables
- 1 box Cheddar Bay Biscuit Mix
- 2 cups whole milk
- 1 can chicken broth
- 1 can cream of chicken soup
- Garlic powder
- Onion powder
- Black pepper
Instructions
- Preheat and Prepare the Dish
- Heat your oven to 375°F.
- Grease the sides of a large 9×13-inch casserole dish thoroughly so cleanup stays easy later.
- Melt the butter completely and pour it into the bottom of the baking dish. Tilt the dish gently if needed to spread the butter evenly across the bottom surface.
- Add the Chicken Layer
- Arrange the shredded chicken evenly over the melted butter.
- Try to distribute the chicken in one consistent layer so every serving contains plenty of filling.
- Rotisserie chicken works especially well because it stays moist and flavorful throughout baking.
- Add the Vegetables and Seasoning
- Spread the frozen mixed vegetables directly over the chicken.
- Sprinkle garlic powder, onion powder, and black pepper evenly across the vegetables. Use salt carefully since the biscuit mix, soup, and broth already contain sodium.
- Prepare the Biscuit Mixture
- In a medium mixing bowl, combine the biscuit mix and the seasoning packet included in the box.
- Pour in the milk and whisk until the mixture becomes smooth with very few lumps remaining.
- Slowly pour this mixture evenly over the casserole layers.
- Do not stir after pouring.
- Make the Creamy Sauce
- Using the same bowl, whisk together the cream of chicken soup and chicken broth until smooth and fully blended.
- Carefully pour the mixture evenly over the biscuit layer.
- Again, avoid stirring the casserole.
- The separate layers create the signature cobbler texture as everything bakes.
- Bake the Casserole
- Place the baking dish uncovered onto the center oven rack.
- Bake for 55 to 65 minutes until the top becomes deeply golden brown and fully cooked.
- The biscuit topping should rise beautifully while the filling bubbles underneath.
- Check the center carefully before removing from the oven to ensure the biscuit layer finishes baking completely.
- Let It Rest Before Serving
- Remove the casserole from the oven and allow it to sit for about 10 minutes.
- Resting helps the creamy filling thicken slightly and makes the casserole easier to scoop and serve.
Notes
- Add shredded cheddar cheese before the biscuit layer for a richer casserole.
- Frozen broccoli, peas, or corn work well as vegetable swaps.
- Let the casserole bake fully so the topping cooks through properly.
- Rotisserie chicken creates the easiest and most flavorful version.
