  • 1 pound kielbasa sausage, sliced into rounds
  • 1 small yellow onion, diced
  • 2 garlic cloves, finely minced
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced into thin half-moons
  • 16 ounces shelf-stable potato gnocchi
  • ¾ cup chicken broth
  • ½ cup heavy cream
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, optional
  • 1 cup shredded mozzarella or cheddar cheese
  • Fresh parsley for garnish


Instructions

  1. Brown the Sausage
    • Place a large skillet over medium heat and add the olive oil. Once hot, add the sliced kielbasa in a single layer.
    • Cook the sausage for several minutes on each side until the edges become browned and slightly crisp. Stir occasionally so the slices cook evenly.
    • Once browned, transfer the kielbasa to a plate and keep it nearby for later.
  2. Cook the Vegetables
    • Without wiping out the skillet, add the diced onion directly into the pan. Cook while stirring occasionally until the onion softens and becomes translucent.
    • Add the minced garlic, chopped bell pepper, and sliced zucchini. Continue cooking for another few minutes until the vegetables become tender but still hold a little texture.
    • The vegetables should smell fragrant and absorb the smoky flavor left behind from the sausage.
  3. Toast the Gnocchi
    • Add the potato gnocchi directly into the skillet with the vegetables.
    • Cook for about 2–3 minutes, stirring occasionally, so the gnocchi develops a light golden sear on the outside. This helps improve the texture and prevents the gnocchi from becoming overly soft later.
  4. Create the Sauce
    • Pour the chicken broth and heavy cream into the skillet.
    • Sprinkle in the paprika, black pepper, and salt if needed. Stir thoroughly so all the ingredients combine evenly.
    • Allow the sauce to warm and begin gently bubbling.
  5. Simmer Everything Together
    • Return the browned kielbasa back into the skillet and stir to combine.
    • Reduce the heat to low and place a lid over the skillet. Let everything simmer gently for about 5–6 minutes.
    • During this time, the gnocchi softens while the sauce thickens into a creamy consistency.
    • Stir occasionally to make sure nothing sticks to the bottom of the skillet.
  6. Melt the Cheese
    • Sprinkle the shredded cheese evenly across the top of the skillet.
    • Cover the pan again for another minute or two until the cheese melts fully into the hot sauce.
    • The melted cheese creates a creamy, rich finish throughout the dish.
  7. Garnish and Serve
    • Remove the skillet from the heat and sprinkle chopped parsley over the top for freshness.
