  • 1 cup shredded cheddar cheese
  • 1/2 cup canned black beans, rinsed and drained

  • 1/4 cup jalapeños, diced, fresh or pickled

  • 1/2 cup chopped fresh cilantro
  • 1/2 cup crushed tortilla chips, for coating


Instructions

  1. Place the softened cream cheese and shredded cheddar cheese in a large mixing bowl. Stir them together until the mixture becomes smooth, thick, and evenly combined. Break up any cream cheese lumps as you mix so the base turns creamy and uniform.
  2. Add the black beans, corn, diced tomatoes, chopped red onion, diced jalapeños, lime juice, garlic powder, cumin, salt, and pepper. Stir carefully but thoroughly until the vegetables and seasonings are spread through the cheese mixture. Make sure every spoonful picks up a little bit of bean, corn, tomato, onion, and jalapeño.
  3. Taste the mixture before shaping it. Adjust the salt, pepper, lime, or jalapeños if needed. This is your chance to balance the flavor while the filling is still easy to work with.
  4. Lay a large piece of plastic wrap on a clean surface. Spoon the cheese mixture into the center, then use your hands to shape it into a firm log or cylinder. Press gently as you form it so the shape holds together and the surface looks even.
