Description

A cool, creamy, zesty dip made with sour cream, Rotel, ranch, taco seasoning, and cheese. It is quick to mix, easy to chill, and perfect for chips, parties, and outdoor snacking.

Ingredients

Scale
  • 1 (16-oz.) container sour cream
  • 1 (10-oz.) can fire-roasted diced tomatoes and green chiles, drained
  • 1 (1-oz.) envelope ranch dressing mix
  • 1 (1-oz.) envelope taco seasoning mix
  • 1 (8-oz.) package shredded Cheddar-Jack or mild Cheddar cheese
  • 1/4 cup thinly sliced scallions, optional
  • Tortilla chips or potato chips, for serving

Instructions

  1. Drain the tomatoes and green chiles well. This helps keep the dip thick and creamy instead of watery.
  2. Add the sour cream to a medium mixing bowl. Stir in the ranch dressing mix and taco seasoning until the seasonings are evenly blended into the sour cream.
  3. Fold in the drained tomatoes and green chiles, then add the shredded cheese. Stir everything together until the mixture looks uniform and the cheese is spread throughout the dip.
  4. If you want scallions, stir some into the dip or sprinkle them over the top as a garnish. They add freshness and a little color.
  5. Cover the bowl and refrigerate until ready to serve, or serve immediately if you prefer. Chilling helps the flavors meld and gives the dip a better overall texture.
  6. Spoon the dip into a serving bowl and serve cold or at room temperature with tortilla chips or potato chips.

Notes

  • Why It’s Called Boat Dip
Boat dip got its name because it fits perfectly into easy, casual settings. It works on a boat, by the lake, at the beach, on the porch, or anywhere people want a simple snack they can eat with chips. Since it does not need utensils and tastes great cold, it has become a favorite for laid-back gatherings and summer parties.
  • Serving Ideas
Serve with tortilla chips, potato chips, pita chips, sliced cucumbers, bell peppers, carrots, crackers, breadsticks, or crostini. It also pairs nicely with guacamole, salsa, a cheese board, grilled vegetables, stuffed jalapeños, shrimp skewers, chicken skewers, or mini sandwiches.
  • Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. Do not freeze, since freezing can change the texture and make the dip less creamy after thawing.
