Description

These Blueberry Blondies combine buttery vanilla blondie batter, creamy white chocolate, and fresh blueberries into a soft, chewy dessert bar that’s perfect for summer parties, picnics, and everyday treats.

Ingredients

  • Unsalted butter
  • White chocolate chips
  • Granulated sugar
  • Vanilla extract
  • Eggs
  • All-purpose flour
  • Salt
  • Fresh blueberries

Instructions

  1. Place the white chocolate chips into a heatproof mixing bowl.
  2. Add the butter to a small saucepan and melt it completely over medium heat, stirring occasionally to prevent scorching.
  3. Once the butter has fully melted, pour it directly over the white chocolate chips. Let the mixture sit for about 5 minutes so the heat can soften and melt the chocolate.
  4. Whisk the mixture until smooth and fully combined. Set it aside and allow it to cool and thicken slightly. This step helps create the ideal blondie texture.
  5. Preheat your oven to 350°F. Position the rack in the center of the oven.
  6. Line an 8×8-inch baking pan with parchment paper and lightly coat it with nonstick cooking spray.
  7. Transfer the cooled white chocolate mixture to a large mixing bowl. Add the granulated sugar and whisk for 1 to 2 minutes until well combined.
  8. Stir in the vanilla extract.
  9. Add the eggs and whisk until the batter becomes smooth and glossy.
  10. Add the flour and salt. Using a silicone spatula, gently fold the ingredients together until only a few streaks of flour remain.
  11. Add the fresh blueberries and continue folding carefully until evenly distributed throughout the batter. Avoid excessive mixing to keep the berries intact.
  12. Pour the batter into the prepared pan and spread it into an even layer from edge to edge.
  13. Bake for 35 to 45 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with only a few moist crumbs attached.
  14. Remove the pan from the oven and place it on a wire rack.
  15. Allow the blondies to cool completely before removing them from the pan.
  16. Lift the blondies out using the parchment paper and slice into squares before serving.
