For the Cake:

  • 1/4 cup of sugar (55g)
  • 1/4 cup of all-purpose flour (35g)
  • 1 tablespoon of cornstarch
  • 1/2 teaspoon of baking powder
  • 1/8 teaspoon of baking soda
  • 1/8 teaspoon of salt
  • 2 tablespoons of oil
  • 1 tablespoon of melted butter
  • 1/4 teaspoon of vanilla extract
  • 1 egg white (or 1 whole egg for a richer cake)
  • 3 tablespoons of buttermilk (mix 3 tablespoons of milk with 1/2 teaspoon of vinegar)
  • 12 teaspoons of red food coloring (adjust to your preference)
  • 1 tablespoon of cocoa powder
  • 1 tablespoon of hot water

For the Cream Cheese Frosting:

  • 1/4 cup of softened butter (56g)
  • 4 ounces of cream cheese (at room temperature (113g))
  • 3/4 cup of powdered sugar
  • 1/4 teaspoon of vanilla extract


Instructions

For the Cake:

  1. Preheat your oven to 350°F and prepare two 4-inch cake pans by greasing them or lining them with parchment paper.
  2. In a bowl, whisk together the sugar, flour, cornstarch, baking powder, baking soda, and salt until well combined and no lumps remain.
  3. Add the oil, melted butter, vanilla extract, egg white, buttermilk, and red food coloring to the dry ingredients. Gently whisk until combined.
  4. In a separate small bowl, mix the cocoa powder with the hot water until smooth. Add this mixture to the cake batter and gently fold it in.
  5. Divide the batter evenly between the two cake pans.
  6. Bake for approximately 15 minutes or until the cakes are cooked through. Allow them to cool completely.

For the Frosting:

  1. In a bowl, whisk together the softened butter, cream cheese, and vanilla extract until smooth.
  2. Gradually add the powdered sugar, whisking until the frosting is thick and creamy.

Assembly:

  1. Trim the tops of the cooled cakes if necessary. Place one cake layer on a serving plate and spread a thick layer of frosting over it.
  2. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

Notes

  • If you prefer a more vibrant red color, you can increase the amount of red food coloring.
