Ingredients
  

Red Velvet Cake:

  • - 3 ¾ cups cake flour about 445 grams
  • - 2 ½ cups granulated sugar about 500 grams
  • - 2 tablespoons cocoa powder about 18 grams
  • - 1 ½ teaspoons baking soda
  • - 2 teaspoons salt
  • - 1 tablespoon vanilla extract
  • - 1 ½ cups buttermilk
  • - 3 eggs
  • - 2 cups neutral oil
  • - 1 ½ teaspoons vinegar
  • - 2 oz red food coloring
  • - ¼ cup hot water

Cream Cheese Icing:

  • - 1 stick butter about 113 grams or 1/2 cup
  • - 1 stick cream cheese about 226 grams or 1 cup
  • - ¼ teaspoon salt
  • - ½ teaspoon almond extract optional
  • - 1 tablespoon vanilla extract
  • - 3-4 cups powdered sugar depending on desired stiffness of icing

Instructions
 

Red Velvet Cake:

  • Mix cake flour, cocoa powder, baking soda, and salt in a bowl. Set aside.
  • In a large bowl, mix vanilla, buttermilk, eggs, and oil until combined.
  • Add sugar and mix well.
  • Stir in vinegar and food coloring.
  • Add dry ingredients and mix until just combined.
  • Pour in hot water and mix until smooth.
  • Divide batter into 3 greased and floured 8-inch cake pans.
  • Bake at 350°F for about 30-40 minutes, or until a toothpick comes out clean.
  • Let cool before frosting.

Cream Cheese Icing:

  • Beat softened butter and cream cheese until fluffy.
  • Add salt, almond extract (if using), and vanilla.
  • Gradually add powdered sugar on low speed until combined.
  • Increase speed and whip until light and fluffy.
  • Spread icing over cooled cake layers.
