Grease an 11x7 non-stick baking dish with cooking spray.
Combine all the ingredients (except chocolate chips) in the prepared baking dish – bananas, oats, brown sugar, baking powder, cinnamon, nutmeg, salt, milk, egg, melted butter, and vanilla extract. Mix well. Sprinkle dark chocolate chips on top.
Bake for 25-30 minutes or until the oatmeal is set and golden brown on top.
Slice and serve with your favorite toppings.
