Description
These brownies lean fully into indulgence. The base bakes up dense and ultra-chocolatey, while ribbons of bourbon-kissed cream cheese melt into every bite. The result is gooey, tangy, warm, and just fancy enough to feel special — without actually being complicated. If you like brownies that taste bakery-level but come together with minimal effort, this one earns a permanent spot in your rotation.
Ingredients
- 1 boxed brownie mix
- 3 eggs, separated (2 whole eggs + 1 egg white)
- 1/2 cup + 1 tablespoon canola oil
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 2 tablespoons bourbon
Instructions
- Prep your oven and pan: Heat the oven to 350°F. Lightly coat a 9×9-inch baking dish with grease or spray so nothing sticks later.
- Mix the brownie batter: In a large bowl, stir together the brownie mix, 2 whole eggs, and oil. Mix just until smooth — overmixing can toughen the texture.
- Make the cream cheese layer: In a stand mixer or with handheld beaters, whip the softened cream cheese and powdered sugar until silky and lump-free.
- Flavor the swirl: Add the egg white and bourbon to the cream cheese mixture. Beat again until everything is fully blended and creamy.
- Layer the batter: Spread about three-quarters of the brownie batter evenly into the prepared pan. Pour the cream cheese mixture over the top and smooth it gently.
- Create the swirl: Spoon the remaining brownie batter over the cream layer in scattered dollops. Take a knife and glide it through the layers in loose S-shaped motions to marble the batter.
- Bake: Transfer to the oven and bake for roughly 45 minutes. The cream cheese swirl should look lightly golden, and a toothpick inserted into the brownie portion should come out mostly clean.
- Cool before slicing: Let the brownies rest until set. This step makes cutting cleaner and keeps the swirl intact.
Notes
If you prefer to skip the bourbon, substitute 1 teaspoon vanilla extract plus 1 tablespoon + 2 teaspoons milk for a similar texture and flavor balance.
