  • 1 cup smooth peanut butter

  • 1 cup graham cracker crumbs

Chocolate Cookie Coating

  • 1¼ cups chocolate sandwich cookie crumbs (filling removed)
  • ¼ cup unsalted butter, melted

Chocolate Shell

  • 1½ cups milk or dark chocolate chips
  • ½ cup white chocolate chips (optional, for swirl effect)
  • 1 tablespoon vegetable oil (only if chocolate needs thinning)

Topping

  • ½ cup caramel sauce


Instructions

  1. Make the Peanut Butter Filling
    • In a large bowl, beat the peanut butter, softened butter, and powdered sugar until silky smooth. Stir in the graham cracker crumbs until fully blended and thick. Cover and chill the mixture for about 15 minutes so it firms up and becomes easier to roll.
  2. Prepare the Cookie Wrapper
    • While the filling chills, combine the chocolate cookie crumbs with melted butter in a medium bowl. Mix until the crumbs come together like soft dough. Refrigerate for 10–15 minutes to slightly firm.
  3. Form the Snowballs
    • Scoop the chilled peanut butter mixture into small portions and roll into smooth balls. Place them on a baking sheet lined with wax or parchment paper.
    • Take the cookie mixture and flatten small portions into thin discs. Set a peanut butter ball in the center of each disc, then gently wrap the cookie layer around it, sealing completely. Roll between your palms until smooth.
    • Once all balls are assembled, return them to the fridge for at least 30 minutes so they hold their shape.
  4. Dip in Chocolate
    • Melt the milk or dark chocolate slowly using a double boiler or microwave in short bursts, stirring often. Melt white chocolate separately if using. If the chocolate seems too thick, stir in a small amount of vegetable oil for smoother coating.
    • Dip each chilled snowball into the melted chocolate, letting excess drip off before placing back on the lined sheet. For a marbled look, drizzle white chocolate over the wet coating.
    • Allow the chocolate to fully harden.
  5. Finish with Caramel
    • Warm the caramel sauce until pourable, then drizzle over the set chocolate-coated snowballs. Return them to the refrigerator for another 30 minutes to fully set.
  6. Serve or Store
    • Once firm, transfer the snowballs to a serving platter or airtight container. Keep refrigerated until ready to enjoy.
