- 3 big chicken breasts, cut into bite-sized chunks
- 4 russet potatoes, peeled and diced into cubes
- 2 tbsp olive oil
- 6 garlic cloves, finely chopped
- 1 cup chicken stock
- 1 cup heavy whipping cream
- 1 cup grated cheddar cheese
- 1/2 cup finely grated Parmesan
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and black pepper, to taste
- 1/4 cup chopped fresh parsley for topping
Instructions
- Start by heating your oven to 400°F (200°C) so it’s ready when the dish goes in.
- Warm the olive oil in a large skillet over medium heat. Drop in the garlic and cook briefly until aromatic, just about a minute, stirring so it doesn’t scorch.
- Add the chicken pieces and cook until the edges turn lightly golden, around 5 to 7 minutes. Remove the chicken and set it aside for later.
- Using the same pan, pour in the chicken stock and cream, then mix in the cheddar and Parmesan. Stir continuously until everything melts into a smooth, velvety sauce.
- Sprinkle in the thyme, rosemary, salt, and pepper. Let the sauce gently bubble on a low simmer, keeping an eye on it so it stays silky instead of boiling hard.
- Toss the potato cubes into the sauce and mix until every piece is coated. Return the chicken to the pan and stir to combine everything evenly.
- Transfer the mixture into a greased baking dish, spreading it out so the chicken and potatoes cook consistently.
- Bake for 25 to 30 minutes, or until the chicken is fully cooked and the potatoes are tender when pierced with a fork.
- Remove from the oven and allow it to rest for a few minutes. Finish by scattering fresh parsley over the top for color and freshness.
