  • 3 big chicken breasts, cut into bite-sized chunks
  • 4 russet potatoes, peeled and diced into cubes
  • 2 tbsp olive oil
  • 6 garlic cloves, finely chopped
  • 1 cup chicken stock
  • 1 cup heavy whipping cream
  • 1 cup grated cheddar cheese
  • 1/2 cup finely grated Parmesan
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper, to taste
  • 1/4 cup chopped fresh parsley for topping


Instructions

  1. Start by heating your oven to 400°F (200°C) so it’s ready when the dish goes in.
  2. Warm the olive oil in a large skillet over medium heat. Drop in the garlic and cook briefly until aromatic, just about a minute, stirring so it doesn’t scorch.
  3. Add the chicken pieces and cook until the edges turn lightly golden, around 5 to 7 minutes. Remove the chicken and set it aside for later.
  4. Using the same pan, pour in the chicken stock and cream, then mix in the cheddar and Parmesan. Stir continuously until everything melts into a smooth, velvety sauce.
  5. Sprinkle in the thyme, rosemary, salt, and pepper. Let the sauce gently bubble on a low simmer, keeping an eye on it so it stays silky instead of boiling hard.
  6. Toss the potato cubes into the sauce and mix until every piece is coated. Return the chicken to the pan and stir to combine everything evenly.
  7. Transfer the mixture into a greased baking dish, spreading it out so the chicken and potatoes cook consistently.
  8. Bake for 25 to 30 minutes, or until the chicken is fully cooked and the potatoes are tender when pierced with a fork.
