Soup Base

  • 3 boneless, skinless chicken breasts
  • 1 tbsp minced garlic
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 tsp Italian herb blend
  • 4 cups chicken stock
  • 1 cup freshly shredded Parmesan cheese
  • 1 cup heavy cream
  • 8 oz uncooked rotini pasta

Topping

  • 1/2 cup breadcrumbs
  • 1 tbsp butter
  • 1 1/2 cups shredded mozzarella


Instructions

  1. Add the chicken breasts, chicken stock, crushed tomatoes, tomato sauce, garlic, salt, pepper, and Italian seasoning to your slow cooker. Stir gently to combine everything.
  2. Cover and cook on HIGH for 3–4 hours or LOW for 6–8 hours until the chicken is fully cooked and tender.
  3. Remove the chicken, shred it using two forks, and return it to the pot. Stir in the heavy cream, uncooked rotini, and Parmesan cheese.
  4. Replace the lid and continue cooking for another 15 minutes on HIGH or about 30 minutes on LOW, until the pasta is tender.
  5. While the soup finishes, melt butter in a small skillet and toast the breadcrumbs until golden and slightly crisp.
  6. Spoon soup into bowls and finish each serving with a sprinkle of mozzarella and the buttery toasted breadcrumbs for irresistible texture.
