Topping
- 1 can pineapple rings, thoroughly drained

Instructions
- Heat your oven to 350°F (180°C). Line baking sheets with parchment paper to prevent sticking.
- In a large mixing bowl, beat the softened butter and sugar together until pale, fluffy, and smooth, about 2–3 minutes.
- Mix in the egg and vanilla extract until fully blended.
- In a separate bowl, stir together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until a soft dough forms.
- Scoop about 2 tablespoons of dough per cookie and place onto the prepared baking sheets, spacing them apart.
- Gently press a pineapple ring into the center of each dough mound, slightly flattening the cookie.
- Sprinkle sugar over the pineapple to encourage caramelization while baking.
- Bake for 11–13 minutes, until the edges turn lightly golden and the centers are set.
- Let cookies rest on the baking sheet for a few minutes, then move to a wire rack to cool completely.
