Instructions

  1. Heat your oven to 350°F (180°C). Line baking sheets with parchment paper to prevent sticking.
  2. In a large mixing bowl, beat the softened butter and sugar together until pale, fluffy, and smooth, about 2–3 minutes.
  3. Mix in the egg and vanilla extract until fully blended.
  4. In a separate bowl, stir together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until a soft dough forms.
  5. Scoop about 2 tablespoons of dough per cookie and place onto the prepared baking sheets, spacing them apart.
  6. Gently press a pineapple ring into the center of each dough mound, slightly flattening the cookie.
  7. Sprinkle sugar over the pineapple to encourage caramelization while baking.
  8. Bake for 11–13 minutes, until the edges turn lightly golden and the centers are set.
