Instructions

- Stir in the onion, garlic, thyme, and parsley. Cook for 2–3 minutes, just until fragrant and tender.
- Increase the heat to medium. Sprinkle the flour over the mixture and stir constantly for 3–4 minutes to form a light roux.
- Slowly pour in the chicken stock, stirring continuously to keep the soup smooth and lump-free.
- Add the heavy cream and stir until the soup is fully blended.
- Carefully transfer the soup to a blender in batches and purée until silky smooth.
- Return the blended soup to the pot and simmer gently over medium-low heat for about 10 minutes to thicken slightly.
- Season generously with salt and pepper. Serve hot.
