- ⅔ cup natural unsalted peanut butter
- ½ cup sugar (white, brown, or coconut all work)
- 1 teaspoon vanilla extract
- ½ cup vanilla-flavored protein powder
- ½ teaspoon baking soda
- ¼ teaspoon salt (skip if your peanut butter is already salted)
- ½ cup chocolate chips
Instructions
- Set your oven to 350°F (175°C) and prepare a baking tray with parchment paper.
- In a medium bowl, beat the eggs, peanut butter, sugar, and vanilla until the mixture turns smooth and creamy.
- Add the protein powder, baking soda, and salt. Stir until you get a thick, dough-like consistency.
- Gently mix in the chocolate chips so they’re evenly spread throughout.
- Scoop about 2 tablespoons of dough per cookie, roll into balls, and press slightly flat on the tray. These won’t spread much, so shape them how you want them to look.
- Bake for 8–12 minutes, depending on how soft or firm you like your cookies. Ten minutes usually hits the sweet spot.
- Let the cookies rest on the tray for around 20 minutes to set before digging in.
Notes
Vanilla pea protein gives great flavor and texture, but whey or other vanilla protein blends work just fine too.
