Ingredients

  • ¼ cup almond flour (or oat flour as an alternative)
  • 2 tbsp plain Greek yogurt (non-fat or regular)
  • 1 tbsp maple syrup (or honey)
  • 2 tbsp almond milk
  • 1 egg
  • ½ tsp baking powder
  • A small pinch of salt
  • 1 tbsp mini chocolate chips (optional but delicious)


Instructions

  1. Heat Oven
    • Set your oven to 350°F (175°C). Lightly grease a mini muffin tray or place liners in the cups.
  2. Combine Wet Ingredients
    • In a mixing bowl, whisk together the egg, yogurt, almond milk, and maple syrup until the mixture is smooth and creamy.
  3. Add the Dry Mix
    • Sprinkle in the protein powder, cocoa powder, almond flour, baking powder, and salt. Stir just until everything comes together into a thick brownie batter.
  4. Optional Add-Ins
    • If you want extra chocolate goodness, fold in the mini chocolate chips.
  5. Fill the Pan
    • Spoon the batter evenly into 8–10 mini muffin wells.
  6. Bake
    • Bake for 10–12 minutes. A toothpick inserted into the center should come out with only a few moist crumbs.
