Single Serve Red Velvet Cake
Ingredients
For the Cake:
- 1/4 cup of sugar 55g
- 1/4 cup of all-purpose flour 35g
- 1 tablespoon of cornstarch
- 1/2 teaspoon of baking powder
- 1/8 teaspoon of baking soda
- 1/8 teaspoon of salt
- 2 tablespoons of oil
- 1 tablespoon of melted butter
- 1/4 teaspoon of vanilla extract
- 1 egg white or 1 whole egg for a richer cake
- 3 tablespoons of buttermilk mix 3 tablespoons of milk with 1/2 teaspoon of vinegar
- 1-2 teaspoons of red food coloring adjust to your preference
- 1 tablespoon of cocoa powder
- 1 tablespoon of hot water
For the Cream Cheese Frosting:
- 1/4 cup of softened butter 56g
- 4 ounces of cream cheese at room temperature (113g)
- 3/4 cup of powdered sugar
- 1/4 teaspoon of vanilla extract
Instructions
For the Cake:
- Preheat your oven to 350°F and prepare two 4-inch cake pans by greasing them or lining them with parchment paper.
- In a bowl, whisk together the sugar, flour, cornstarch, baking powder, baking soda, and salt until well combined and no lumps remain.
- Add the oil, melted butter, vanilla extract, egg white, buttermilk, and red food coloring to the dry ingredients. Gently whisk until combined.
- In a separate small bowl, mix the cocoa powder with the hot water until smooth. Add this mixture to the cake batter and gently fold it in.
- Divide the batter evenly between the two cake pans.
- Bake for approximately 15 minutes or until the cakes are cooked through. Allow them to cool completely.
For the Frosting:
- In a bowl, whisk together the softened butter, cream cheese, and vanilla extract until smooth.
- Gradually add the powdered sugar, whisking until the frosting is thick and creamy.
Assembly:
- Trim the tops of the cooled cakes if necessary. Place one cake layer on a serving plate and spread a thick layer of frosting over it.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

Notes
- If you prefer a more vibrant red color, you can increase the amount of red food coloring.
- Be careful not to overmix the cake batter or overbake the cakes for the best results.
