Pasta & Cheese Sauce
- 8 ounces short pasta (macaroni, shells, cavatappi, or similar)
- 1 wheel Boursin cheese
- 1 cup freshly shredded white cheddar
- 1 cup heavy cream
- ½ cup milk, plus more if needed
- ½ teaspoon salt
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
Crunchy Topping
- 1 cup plain breadcrumbs
- 2 tablespoons unsalted butter

- Cook the Pasta: Fill a large pot with water, season it generously with salt, and bring it to a rolling boil. Add the pasta and cook just until tender but still firm to the bite. Drain well and set aside. Reserve a small cup of the pasta water in case the sauce needs thinning later.
- Build the Creamy Sauce: Using the same pot or a separate saucepan, melt 2 tablespoons of butter over medium heat. Sprinkle in the flour and whisk continuously for about a minute, until smooth and lightly bubbling. Slowly pour in the heavy cream while whisking to keep the sauce lump-free. Add the Boursin cheese and shredded white cheddar, stirring gently as they melt into a smooth, creamy sauce. If the sauce feels too thick, gradually stir in the milk until it reaches a velvety consistency. Taste and adjust seasoning with salt if needed.
- Combine Pasta and Sauce: Add the cooked pasta directly into the cheese sauce. Stir gently until every piece is coated. Let the mixture rest briefly—the sauce will naturally thicken as it sits. For a looser texture, mix in a splash of reserved pasta water or additional milk.
- Toast the Breadcrumbs: In a small skillet, melt the remaining butter over medium heat. Add the breadcrumbs and cook, stirring often, until golden and fragrant, about 2–3 minutes. Remove from heat and allow to cool slightly.
- Finish and Serve: Spoon the creamy pasta into bowls or a serving dish. Sprinkle the toasted breadcrumbs generously over the top and serve immediately. If desired, add a touch of fresh chopped parsley for color and freshness.
