Red Velvet Cake
Ingredients
Red Velvet Cake:
- – 3 ¾ cups cake flour about 445 grams
- – 2 ½ cups granulated sugar about 500 grams
- – 2 tablespoons cocoa powder about 18 grams
- – 1 ½ teaspoons baking soda
- – 2 teaspoons salt
- – 1 tablespoon vanilla extract
- – 1 ½ cups buttermilk
- – 3 eggs
- – 2 cups neutral oil
- – 1 ½ teaspoons vinegar
- – 2 oz red food coloring
- – ¼ cup hot water
Cream Cheese Icing:
- – 1 stick butter about 113 grams or 1/2 cup
- – 1 stick cream cheese about 226 grams or 1 cup
- – ¼ teaspoon salt
- – ½ teaspoon almond extract optional
- – 1 tablespoon vanilla extract
- – 3-4 cups powdered sugar depending on desired stiffness of icing
Instructions
Red Velvet Cake:
- Mix cake flour, cocoa powder, baking soda, and salt in a bowl. Set aside.
- In a large bowl, mix vanilla, buttermilk, eggs, and oil until combined.
- Add sugar and mix well.
- Stir in vinegar and food coloring.
- Add dry ingredients and mix until just combined.
- Pour in hot water and mix until smooth.
- Divide batter into 3 greased and floured 8-inch cake pans.
- Bake at 350°F for about 30-40 minutes, or until a toothpick comes out clean.
- Let cool before frosting.
Cream Cheese Icing:
- Beat softened butter and cream cheese until fluffy.
- Add salt, almond extract (if using), and vanilla.
- Gradually add powdered sugar on low speed until combined.
- Increase speed and whip until light and fluffy.
- Spread icing over cooled cake layers.
