Description

These bright, bite-sized protein snacks are creamy, refreshing, and naturally sweet with bursts of juicy blueberries and citrusy lemon. They’re ideal for quick fuel before or after workouts, easy meal prep, or a wholesome snack you can grab anytime without thinking twice.

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 1 cup fresh blueberries, plus a few extra for topping
  • Zest from 1 lemon (about 1 tablespoon)
  • 2 tablespoons honey or maple syrup if preferred
  • ½ cup almond flour
  • 1 teaspoon vanilla extract
  • Small pinch of salt

Instructions

  • Add the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla, and salt to a medium bowl. Fold everything together gently so the blueberries stay mostly intact.
  • Cover the bowl and refrigerate for about 15–20 minutes. This step firms up the mixture and makes shaping much easier.
  • Scoop out portions using a tablespoon and roll them between your hands into neat, compact balls. Arrange them on a parchment-lined tray.
  • If you’d like a lightly set exterior, bake the bites in a 325°F (160°C) oven for 8–10 minutes. Keep an eye on them so they don’t brown too much. Prefer a no-bake option? Simply keep them chilled and skip the oven.
  • Let the bites cool slightly. Finish with a drizzle of honey and a few extra blueberries on top if desired.

Notes

  • Chilling the mixture first helps the bites hold their shape.
  • Mix just until combined—overworking the mixture can make them dense.
  • Ingredient swaps are easy: Greek yogurt can replace cottage cheese, oat flour works instead of almond flour, and agave syrup is a good honey alternative.
  • Store in a sealed container in the refrigerator for up to 3 days, or freeze for longer storage and quick grab-and-go snacks.
