- 1 cup low-fat cottage cheese
- 1 cup fresh blueberries, plus a few extra for topping
- Zest from 1 lemon (about 1 tablespoon)
- 2 tablespoons honey or maple syrup if preferred
- ½ cup almond flour
- 1 teaspoon vanilla extract
- Small pinch of salt
Instructions
- Add the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla, and salt to a medium bowl. Fold everything together gently so the blueberries stay mostly intact.
- Cover the bowl and refrigerate for about 15–20 minutes. This step firms up the mixture and makes shaping much easier.
- Scoop out portions using a tablespoon and roll them between your hands into neat, compact balls. Arrange them on a parchment-lined tray.
- If you’d like a lightly set exterior, bake the bites in a 325°F (160°C) oven for 8–10 minutes. Keep an eye on them so they don’t brown too much. Prefer a no-bake option? Simply keep them chilled and skip the oven.
- Let the bites cool slightly. Finish with a drizzle of honey and a few extra blueberries on top if desired.
