For the Chicken
- 1 pound boneless chicken thighs or breasts

- 1 teaspoon smoked paprika
- 1 teaspoon garlic seasoning
- 1 teaspoon onion seasoning
- ½ teaspoon chili spice (optional, if you like heat)
For the Sauce
- 4 tablespoons butter
- 4 fresh garlic cloves, finely chopped
- 2 tablespoons honey
- ⅓ cup barbecue sauce of choice
- 1 tablespoon fresh lemon juice
Taco Fixings
- 8 mini flour or corn tortillas
- ½ cup finely shredded lettuce
- ½ cup grated cheddar or Monterey Jack
- ¼ cup finely chopped red onion
- ¼ cup freshly chopped cilantro
- Lime wedges for squeezing
Instructions
- Place the chicken in a mixing bowl and drizzle with olive oil. Sprinkle over all the seasonings and toss until every piece is well coated.
- Heat a large pan over medium-high and cook the chicken until golden on the outside and cooked through, about 5–6 minutes per side. Transfer to a plate and allow it to rest before slicing or pulling apart.
- Using the same pan, reduce heat to medium and add butter. Once melted, stir in the garlic and cook briefly until aromatic, about 30 seconds.
- Pour in the honey, barbecue sauce, and lemon juice. Stir and let the mixture gently bubble for a couple of minutes until it turns slightly glossy and thick.
- Slice or shred the rested chicken and toss it into the warm sauce, coating every bite generously.
- Warm your tortillas, then fill them with lettuce, saucy chicken, cheese, red onion, and cilantro. Finish with a fresh squeeze of lime before serving.
