Oven-Baked Shrimp Skewers

Ingredients

  • 1 pound of large shrimp (peeled, deveined, and butterflied)
  • 1 green bell pepper (cut into squares)
  • 1 red bell pepper (cut into squares)
  • 1/4 cup of olive oil
  • 1 to 2 teaspoons of chipotle powder (you can use 2 tablespoons of chipotle pepper in adobo paste as a substitute)
  • 2 teaspoons of minced fresh garlic
  • 2 teaspoons of chili powder
  • 1 teaspoon of coriander
  • 1 teaspoon of oregano
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of cumin
  • 1 teaspoon of salt (adjust to taste)
  • Juice of 1/2 lime
  • 2 tablespoons of finely chopped cilantro


Instructions

  1. Preheat your oven to 425°F.
  2. Place wooden skewers in a bowl of water to soak for 20 minutes. This prevents them from burning in the oven.
  3. In a large bowl, combine the shrimp, olive oil, chipotle powder (or chipotle pepper in adobo paste), fresh garlic, chili powder, coriander, oregano, onion powder, cumin, salt, lime juice, and cilantro. Mix everything together well.
  4. Thread the shrimp and bell peppers onto the skewers in an alternating pattern. Make sure to brush the peppers with any extra marinade.
  5. Place the skewers on a rack and bake in the oven for about 6 to 7 minutes, or until the shrimp turns pink. For extra browning, you can turn on the broil setting for 1 to 2 minutes.
  6. Serve the shrimp skewers immediately and enjoy your delicious meal!
