- 3 large eggs
- 1 cup shredded mozzarella cheese
- ½ cup mini turkey pepperoni
- ¼ cup grated parmesan cheese

- ½ teaspoon garlic powder
- Salt + pepper to taste
Instructions
- Preheat & Prep
- Heat your oven to 375°F (190°C). Coat a 9×9 baking dish with cooking spray or a thin layer of oil.
- Mix Wet Base
- In a mixing bowl, whisk the cottage cheese and eggs until well blended and creamy.
- Add the Good Stuff
- Stir in the shredded mozzarella, parmesan, Italian seasoning, garlic powder, and most of the turkey pepperoni. Season lightly with salt and pepper.
- Pour & Top
- Spread the mixture evenly into your baking dish and decorate the top with the remaining pepperoni slices.
- Bake
- Bake for 30–35 minutes, or until the casserole has set and the top turns bubbly with a golden finish.
- Cool & Serve
- Allow it to rest for a couple of minutes before cutting into squares. Serve warm with marinara for dipping.
