Description

If you want a dinner that tastes like pizza night without actually ordering pizza, this cozy casserole delivers. Creamy cottage cheese, melty mozzarella, and pepperoni bake together into a high-protein, low-carb meal that comes out bubbling and golden. It’s the perfect “lazy dinner” you can throw together on busy nights — and it only takes about 45 minutes from start to finish.

Ingredients

Scale
  • 2 cups cottage cheese
  • 3 large eggs
  • 1 cup shredded mozzarella cheese
  • ½ cup mini turkey pepperoni
  • ¼ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt + pepper to taste

Instructions

  1. Preheat & Prep
    • Heat your oven to 375°F (190°C). Coat a 9×9 baking dish with cooking spray or a thin layer of oil.
  2. Mix Wet Base
    • In a mixing bowl, whisk the cottage cheese and eggs until well blended and creamy.
  3. Add the Good Stuff
    • Stir in the shredded mozzarella, parmesan, Italian seasoning, garlic powder, and most of the turkey pepperoni. Season lightly with salt and pepper.
  4. Pour & Top
    • Spread the mixture evenly into your baking dish and decorate the top with the remaining pepperoni slices.
  5. Bake
    • Bake for 30–35 minutes, or until the casserole has set and the top turns bubbly with a golden finish.
  6. Cool & Serve
    • Allow it to rest for a couple of minutes before cutting into squares. Serve warm with marinara for dipping.

Notes

  • Add veggies like spinach, mushrooms, or bell peppers to boost flavor and nutrients.
  • Swap cottage cheese for ricotta if you want a softer, more velvety texture.
  • Freeze individual squares for grab-and-heat meal prep.
