Ingredients

  • – 1 cup softened salted butter (226 g)
  • – 3/4 cup packed dark brown sugar (100 g)
  • – 1/2 cup granulated sugar (100 g)
  • – 2 eggs
  • – 1 tablespoon vanilla bean paste or 2 teaspoons vanilla extract
  • – 1 1/2 cups all-purpose flour (180 g)
  • – 1 1/4 cups cake flour (160 g)
  • – 1 teaspoon baking powder
  • – 1 teaspoon baking soda
  • – 1 teaspoon salt
  • – 2 cups sweetened shredded coconut flakes (160 g)
  • – 2 cups chocolate chips (12 oz)
  • – 1/2 cup caramel or toffee bits (75 g)


Instructions

  1. Preheat oven to 400°F.
  2. In a mixing bowl, beat butter and sugars until light and fluffy.
  3. Add eggs and vanilla, mix until combined.
  4. Mix in dry ingredients until just combined.
  5. Add coconut, chocolate chips, and caramel/toffee bits, mix gently.
  6. Scoop dough into 8 balls, leaving them stacked and ragged on parchment-lined sheets.
  7. Bake for 12-14 minutes until golden outside and soft inside.
  8. Cool for at least 30 minutes before indulging.
