Think creamy, fiery salmon layered over tangy sushi rice and baked until everything melds together into one irresistible, shareable dish. Ingredients
Rice Base
- 2 cups uncooked sushi rice
- 2.5 cups water
- ¼ cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
Spicy Salmon Layer
- 1 lb fresh salmon, skin removed and cut into small chunks
- ½ cup mayonnaise
- 2 tablespoons Sriracha (add more or less depending on your heat preference)
- 1 teaspoon sesame oil
- ½ cup chopped green onions, plus more for topping
- 1 sheet nori, sliced into thin slivers
- Tobiko (optional, for serving)
Instructions
- Heat the Oven: Set your oven to 375°F (190°C) so it’s ready once your layers are assembled.
- Prepare the Rice: Rinse the sushi rice under cold running water until the water is almost clear. Cook it in a pot or rice cooker with the measured water until the grains are soft and fluffy.
- Season the Rice: In a small bowl, stir the rice vinegar, sugar, and salt together until everything dissolves. After the rice finishes cooking, gently fold this seasoning mixture into the rice with a fork or rice paddle.
- Layer the Base: Press the warm rice into the bottom of a baking dish and allow it to cool down slightly before adding the salmon topping.
- Mix the Spicy Salmon: In another bowl, toss the chopped salmon with mayo, Sriracha, sesame oil, and green onions. Give it a taste and adjust the heat level to your liking.
- Assemble the Bake: Spread the spicy salmon mixture over the rice so it covers the surface evenly.
- Bake It: Transfer the dish to the oven and bake for 25–30 minutes, or until the salmon is cooked through and the top starts to take on a little golden color.
- Finish and Serve: Allow the bake to cool slightly, then sprinkle extra green onions, nori strips, and tobiko over the top. Scoop and serve while warm.
Notes
- Swap salmon for cooked crab or shrimp if you want a different seafood twist.
- For a gentler heat level, simply scale back the Sriracha.
