- Prep the Pan:
- Heat your oven to 350°F (175°C). Lightly coat a loaf pan with baking spray so the bread releases easily once baked.
- Combine Dry Ingredients:
- In a medium bowl, whisk together flour, baking powder, salt, and nutmeg. Set aside while you work on the wet ingredients.
- Mix Wet Ingredients:
- In a large mixing bowl, whisk the eggs. Add sugar, eggnog, melted butter, rum extract, and vanilla. Blend until smooth.
- Bring It Together:
- Add the flour mixture into the bowl of wet ingredients. Stir just until everything is evenly combined — no need to overmix.

- Sprinkle in the pudding mix and fold until fully incorporated. The batter will thicken slightly.
- Bake the Loaf:
