This rich and soothing Cajun-inspired chicken soup brings serious flavor without any fuss. It’s smooth, a little spicy, and packed with comforting goodness that makes every spoonful feel like a warm hug.

- 2 tablespoons butter
- 1 ½ cups chopped holy trinity (see note below)
- 4 garlic cloves, finely chopped
- 2 tablespoons Cajun seasoning, separated
- 2 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, with juices
- 1 pound boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon neutral oil (avocado or canola work great)
- 1 cup heavy cream or half-and-half, room temperature
- Sliced green onions for topping (optional)
Instructions
- Place a large Dutch oven over medium-high heat. Once warmed, drop in the butter and allow it to fully melt.
- Stir in the chopped holy trinity and cook, stirring occasionally, until the veggies become soft and aromatic, about 5 minutes.
- Add the minced garlic and mix well. Let it cook for about 30–60 seconds until fragrant, then sprinkle in 1 tablespoon of the Cajun seasoning and stir to coat the vegetables evenly.
- Pour in the chicken broth and diced tomatoes (including the liquid). Mix well and bring the soup to a gentle boil. Once bubbling, lower the heat and let it simmer while you prepare the chicken.
- On a cutting board, season the chicken slices evenly with the remaining Cajun seasoning and set aside.
- Heat a skillet over medium heat. Add the oil and swirl to coat the pan. Once the oil looks glossy and hot, lay the chicken in the skillet.
- Cook for 3–5 minutes per side until cooked through and lightly golden. Remove the chicken and let it rest until cool enough to handle, then cut into small bite-sized pieces.
- Turn the heat under the soup down to low and allow it to cool slightly. Slowly stir in the cream until smooth and creamy.
- Add the chopped chicken back into the pot and stir everything together. Let it simmer gently for another 3–5 minutes to blend all the flavors.
- Taste and adjust seasoning if needed. Ladle into bowls and top with green onions if desired. Serve hot and enjoy!
Notes
This classic Cajun base consists of: ½ cup diced onion, ½ cup diced celery, ½ cup diced bell pepper
You can use fresh or frozen. Many grocery stores sell it pre-chopped under names like “Cajun-style mirepoix” for extra convenience.
