  • 1 ½ cups chopped holy trinity (see note below)
  • 4 garlic cloves, finely chopped
  • 2 tablespoons Cajun seasoning, separated
  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon neutral oil (avocado or canola work great)
  • 1 cup heavy cream or half-and-half, room temperature
  • Sliced green onions for topping (optional)


Instructions

  1. Place a large Dutch oven over medium-high heat. Once warmed, drop in the butter and allow it to fully melt.
  2. Stir in the chopped holy trinity and cook, stirring occasionally, until the veggies become soft and aromatic, about 5 minutes.
  3. Add the minced garlic and mix well. Let it cook for about 30–60 seconds until fragrant, then sprinkle in 1 tablespoon of the Cajun seasoning and stir to coat the vegetables evenly.
  4. Pour in the chicken broth and diced tomatoes (including the liquid). Mix well and bring the soup to a gentle boil. Once bubbling, lower the heat and let it simmer while you prepare the chicken.
  5. On a cutting board, season the chicken slices evenly with the remaining Cajun seasoning and set aside.
  6. Heat a skillet over medium heat. Add the oil and swirl to coat the pan. Once the oil looks glossy and hot, lay the chicken in the skillet.
  7. Cook for 3–5 minutes per side until cooked through and lightly golden. Remove the chicken and let it rest until cool enough to handle, then cut into small bite-sized pieces.
  8. Turn the heat under the soup down to low and allow it to cool slightly. Slowly stir in the cream until smooth and creamy.
  9. Add the chopped chicken back into the pot and stir everything together. Let it simmer gently for another 3–5 minutes to blend all the flavors.
  10. Taste and adjust seasoning if needed. Ladle into bowls and top with green onions if desired. Serve hot and enjoy!

Notes

This classic Cajun base consists of: ½ cup diced onion, ½ cup diced celery, ½ cup diced bell pepper

You can use fresh or frozen. Many grocery stores sell it pre-chopped under names like “Cajun-style mirepoix” for extra convenience.
