Instructions
This recipe works best with all-purpose flour, spelt flour, oat flour, or a gluten-free all-purpose blend. Almond flour and whole wheat flour are not recommended for this version.
- Preheat the oven to 350°F (175°C). Lightly grease a donut pan or mini muffin tin.
- In a large mixing bowl, whisk together the mashed banana, sweetener, oil or water, and vanilla until smooth.
- Add the flour, baking powder, and salt to the bowl and stir just until combined. Avoid overmixing.
- Spoon the batter evenly into the prepared pan, smoothing the tops if needed.
- Bake for about 8 minutes, or until the donuts puff up and a toothpick inserted in the center comes out mostly clean.
