- Prep the pan and oven:
- Warm up your oven to 350°F and lightly grease a standard loaf pan. Set it aside so it’s ready when the batter is mixed.
- Mash and mix the wet ingredients:
- Peel your bananas and drop them into a large bowl. Mash them with a fork until they’re mostly smooth. Add the oil, eggs, both sugars, vanilla, and eggnog. Whisk gently to combine—just enough to bring everything together without overmixing. An electric mixer works too if you prefer.
- Add the dry ingredients:
- Sprinkle in the flour, spices, salt, baking soda, and baking powder. Stir until the batter looks uniform and no dry spots remain.
