Harissa Honey Chicken
Ingredients
- 2 pounds boneless skinless chicken thighs
- 3 tablespoons olive oil
- 3 tablespoons harissa paste adjust to taste
- 1 1/2 tablespoons finely minced garlic
- 2-3 tablespoons lemon juice
- 1 tablespoon finely chopped parsley
- 1 tablespoon finely chopped cilantro
- 2 teaspoons paprika
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 2 teaspoons salt
- 2 tablespoons honey
- 1 to 2 tablespoons unsalted butter
Instructions
- In a large bowl, combine chicken thighs, olive oil, harissa paste, lemon juice, garlic, parsley, cilantro, paprika, coriander, cumin, and salt. Mix well to evenly coat the chicken in the marinade.
- Heat olive oil in a cast-iron skillet, pan, or grill over medium-high heat. Add the chicken and cook on each side until a nice brown crust develops, about 5 to 6 minutes per side.
- Reduce the heat to low, add the butter and honey to the skillet, and cook for an additional minute or two until the chicken is cooked through.
- Transfer the cooked chicken to a cutting board. Once it has cooled slightly, chop it into small pieces.
