Sweet lump crab meat, a light creamy dressing, and that unmistakable Old Bay flavor come together between buttery, toasted bread for a seafood grilled cheese that feels both comforting and special.


Ingredients

  • 3 tablespoons mayonnaise
  • 1 tablespoon freshly squeezed lemon juice
  • ½ tablespoon Old Bay seasoning
  • 6 ounces lump crab meat
  • 2 celery stalks, finely chopped
  • 2 tablespoons red onion, finely diced
  • 1 tablespoon fresh parsley, minced
  • Freshly ground black pepper, to taste
  • 4 slices bread of choice
  • 3 tablespoons butter, melted
  • 4 slices cheddar cheese
  • Sliced tomato, optional for serving


Instructions

  1. Heat your oven to 400°F (204°C) and set aside a baking sheet or broiler pan.
  2. In a mixing bowl, stir together the mayonnaise and lemon juice until smooth and creamy.
  3. Gently fold the crab meat into the mayo mixture, keeping the chunks as intact as possible.
  4. Sprinkle in the Old Bay seasoning, then add the celery, red onion, parsley, and a pinch of black pepper. Mix just until everything is evenly combined.
  5. Brush one side of each slice of bread with melted butter. Place two slices on the baking sheet, buttered side down.
  6. Divide the crab mixture evenly between the two slices, spreading it out gently. Layer cheddar cheese over the crab filling.
  7. Top with the remaining bread slices, positioning them buttered side up.
  8. Bake for 5 minutes, then carefully flip the sandwiches and return them to the oven for another 4 minutes.
  9. Switch the oven to broil and toast for 1–2 minutes, watching closely, until the tops turn golden and crisp.
  10. Remove from the oven and, if desired, tuck fresh tomato slices into the sandwiches just before serving.
