Ingredients
Scale
- 3 tablespoons mayonnaise
- 1 tablespoon freshly squeezed lemon juice
- ½ tablespoon Old Bay seasoning
- 6 ounces lump crab meat
- 2 celery stalks, finely chopped
- 2 tablespoons red onion, finely diced
- 1 tablespoon fresh parsley, minced
- Freshly ground black pepper, to taste
- 4 slices bread of choice
- 3 tablespoons butter, melted
- 4 slices cheddar cheese
- Sliced tomato, optional for serving
Instructions
- Heat your oven to 400°F (204°C) and set aside a baking sheet or broiler pan.
- In a mixing bowl, stir together the mayonnaise and lemon juice until smooth and creamy.
- Gently fold the crab meat into the mayo mixture, keeping the chunks as intact as possible.
- Sprinkle in the Old Bay seasoning, then add the celery, red onion, parsley, and a pinch of black pepper. Mix just until everything is evenly combined.
- Brush one side of each slice of bread with melted butter. Place two slices on the baking sheet, buttered side down.
- Divide the crab mixture evenly between the two slices, spreading it out gently. Layer cheddar cheese over the crab filling.
- Top with the remaining bread slices, positioning them buttered side up.
- Bake for 5 minutes, then carefully flip the sandwiches and return them to the oven for another 4 minutes.
- Switch the oven to broil and toast for 1–2 minutes, watching closely, until the tops turn golden and crisp.
- Remove from the oven and, if desired, tuck fresh tomato slices into the sandwiches just before serving.
