  • 1¾ cups dairy-free yogurt
  • ¼ cup peanut butter
  • ⅓ cup vanilla protein powder
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened chocolate chips

Cookie Dough Layer

  • ½ cup protein powder
  • ⅓ cup oat flour
  • 1 teaspoon vanilla extract
  • ¼ cup dairy-free milk (add more if needed)
  • 3 tablespoons maple syrup
  • ¼ cup chocolate chips


Instructions

  1. In a medium bowl, stir together the dairy-free yogurt, peanut butter, vanilla protein powder, and vanilla extract until smooth and creamy.
  2. Line a muffin pan with parchment liners. Spoon a layer of the yogurt mixture into each cup, saving some for the top layer.
  3. In another bowl, mix together the protein powder, oat flour, vanilla extract, dairy-free milk, maple syrup, and chocolate chips. Stir until a soft, moldable dough forms. Add a splash more milk if it feels too thick.
  4. Roll or scoop small portions of the cookie dough and gently place them over the yogurt layer in each cup.
  5. Spoon the remaining yogurt mixture on top, fully covering the cookie dough pieces.
  6. Transfer the muffin tin to the freezer and freeze until firm, about 3–4 hours.
  7. Once set, move the cups to an airtight container and store in the freezer. Before enjoying, let them sit out for a few minutes so they soften slightly and turn extra creamy.
