Ingredients
Yogurt Layer
- 1¾ cups dairy-free yogurt
- ¼ cup peanut butter
- ⅓ cup vanilla protein powder
- 1 teaspoon vanilla extract
- ⅓ cup unsweetened chocolate chips
Cookie Dough Layer
- ½ cup protein powder
- ⅓ cup oat flour
- 1 teaspoon vanilla extract
- ¼ cup dairy-free milk (add more if needed)
- 3 tablespoons maple syrup
- ¼–⅓ cup chocolate chips
Instructions
- In a medium bowl, stir together the dairy-free yogurt, peanut butter, vanilla protein powder, and vanilla extract until smooth and creamy.
- Line a muffin pan with parchment liners. Spoon a layer of the yogurt mixture into each cup, saving some for the top layer.
- In another bowl, mix together the protein powder, oat flour, vanilla extract, dairy-free milk, maple syrup, and chocolate chips. Stir until a soft, moldable dough forms. Add a splash more milk if it feels too thick.
- Roll or scoop small portions of the cookie dough and gently place them over the yogurt layer in each cup.
- Spoon the remaining yogurt mixture on top, fully covering the cookie dough pieces.
- Transfer the muffin tin to the freezer and freeze until firm, about 3–4 hours.
- Once set, move the cups to an airtight container and store in the freezer. Before enjoying, let them sit out for a few minutes so they soften slightly and turn extra creamy.
