Instructions

  1. Set your oven to 375°F (190°C). Place the chicken breasts between sheets of plastic wrap and gently pound them until they’re about ½ inch thick.
  2. In a bowl, mix together the ricotta, Parmesan, spinach, basil, parsley, garlic powder, salt, and pepper until evenly combined.
  3. Arrange the chicken breasts flat and spread the filling over the center of each one. Roll them up snugly and fasten with toothpicks or kitchen twine.
  4. Heat olive oil in a large skillet over medium-high heat. Add the chicken rolls and brown them on all sides, about 3–4 minutes per side.
