Creamy Dill Pickle Sauce
- 1 tbsp ranch seasoning (about half a packet)
- 6 oz plain Greek yogurt or sour cream
- 1 tsp dried dill (or 2 tsp fresh, finely chopped)
- 8 dill pickle slices, minced
- 2 tsp pickle brine
Crispy Chicken Sandwich
- 1/2 lb chicken breast (2 small pieces), flattened to 1/2-inch thickness
- 1/2 cup panko crumbs
- 1 large egg
- 1 tbsp milk
- 1/2 cup all-purpose flour
- 1 tsp dried dill
- Salt and black pepper, to preference
- 2 large sandwich rolls or brioche buns
- 1 cup finely shredded iceberg lettuce
- 16 dill pickle slices

- How to make it: Blend all ingredients in a small mixing bowl until smooth. Cover and chill for at least 30 minutes so the flavors can mingle. If you’re short on time, you can use it sooner, but a little rest makes it extra tasty. Keeps well in the fridge for up to 5 days in a sealed container.
Crispy Chicken Sandwich
- Prepare the Chicken
- Dry the chicken pieces thoroughly with paper towels. If they’re uneven or large, gently pound and trim so they cook evenly and fit the buns nicely.
- Set Up Breading Station
- Place a cooling rack over a tray and set aside.
- Arrange three shallow bowls:
- Bowl 1: Flour mixed with dried dill
- Bowl 2: Egg and milk, whisked together
- Bowl 3: Panko breadcrumbs
- Bread the Chicken
- Coat each piece fully in the flour mixture, then dip into the egg wash, and finally press into the panko until well covered. Set aside.
- Frying Method
- Warm about 1/2 cup oil in a heavy skillet over medium-high heat. Carefully add the chicken and cook for 3–4 minutes per side until beautifully crisp and cooked through. Transfer to the rack to drain.
- OR – Oven Method
- Preheat to 400°F (200°C). Line a baking tray with foil and place a rack on top if available. Spray lightly with nonstick spray. Bake chicken for 15–20 minutes, turning halfway. For deeper browning, briefly broil at the end. A light mist of butter-flavored spray boosts crispiness.
- Rest the Chicken
- Let the pieces sit for a few minutes before stacking your sandwich.
- Building the Sandwich
- Warm the buns lightly in the microwave or under the broiler. Spread a generous spoonful of dill sauce on the bottom half. Add the hot crispy chicken, followed by lettuce and pickle slices. Finish with more sauce on the top bun and press gently together. Best enjoyed straight away!
Notes
You can coat the chicken in advance and refrigerate it up to overnight. Let it come to room temperature for about 30 minutes before cooking for best results.
