Description
This whipped raspberry mousse is a cool, creamy dessert that feels indulgent but stays light and nourishing. Blended cottage cheese creates a silky base, while juicy raspberries add a bright, fruity pop. Naturally sweetened with honey or maple syrup, this no-bake treat is gluten-free, protein-rich, and perfect when you want something sweet without going overboard.
Ingredients
Scale
- 2 cups cottage cheese
- 1 cup raspberries (fresh preferred)
- ¼ cup honey or maple syrup, to taste
- 1 teaspoon vanilla extract
- Extra raspberries and fresh mint for topping
Instructions
- Blend Until Smooth: Add the cottage cheese, raspberries, sweetener, and vanilla to a blender or food processor. Blend until the mixture is completely smooth and creamy, stopping to scrape down the sides if needed.
- Divide and Portion: Pour or spoon the mousse evenly into four small dessert glasses or bowls.
- Chill to Set: Place the mousse in the refrigerator for at least 60 minutes so it thickens slightly and the flavors come together.
- Finish and Enjoy: Just before serving, top with fresh raspberries and a few mint leaves for a fresh, colorful finish.
Notes
- Using Frozen Berries: Frozen raspberries work well—thaw them first and drain off excess liquid before blending.
- Vegan-Friendly Swap: Substitute a plant-based cottage cheese alternative for a dairy-free version.
- Flavor Twists: Mix in other berries or try a flavored syrup like agave or date syrup for a different taste.
- Storage: Store covered in the refrigerator for up to 2–3 days for best texture and flavor.
- Prep Time: 10 minutes
