- 4 large eggs
- ¾ cup granulated sugar
- 1½ cups whole milk
- 1 cup heavy cream
- 1½ teaspoons ground cinnamon or 1 cinnamon stick
- 2 teaspoons vanilla extract or seeds from 1 vanilla bean
- Pinch of salt
- Optional: ¼ teaspoon nutmeg, 1 teaspoon orange zest for a festive twist
Instructions
- Prep the Crust
- Set your oven to 375°F (190°C).
- Fit the pie crust into a 9-inch pie plate, smoothing it into the corners.
- Lay parchment over the crust and fill it with pie weights or dry beans. Bake for 15 minutes.
- Remove the parchment and weights and bake for another 5 minutes until the crust turns a soft golden color. Let it cool briefly.
- Make the Custard
- Warm the milk and cream together in a small saucepan with the cinnamon and vanilla. Heat until it’s steaming but not boiling.
- If using whole spices or beans, allow the mixture to steep for about 10 minutes, then lift them out.
- Whisk the Base
- In a separate bowl, whisk the eggs, sugar, and salt until the mixture looks smooth and slightly lighter in color.
- Combine Everything
- Slowly ladle the warm dairy mixture into the whisked eggs, stirring the entire time to prevent scrambling.
- For an extra luxurious texture, strain the blended custard through a fine sieve.
- Bake the Pie
- Reduce oven temperature to 325°F (160°C).
- Pour the custard into the pre-baked crust.
- Bake for 35–40 minutes. The edges should be firm while the center still has a gentle wobble.

- Allow the pie to cool naturally on the counter.
- Transfer to the refrigerator and chill at least 2 hours before cutting.
