Instructions
- Char the peppers: Heat your oven to 400°F (200°C). Place whole peppers on a baking tray and roast until blistered and slightly blackened, about 25–30 minutes. Let them cool, then peel away the skins and discard seeds.
- Boil the pasta: Bring a large pot of salted water to a rolling boil. Cook pasta according to package directions until tender with a slight bite. Drain and reserve a splash of pasta water.
- Blend the sauce: Add roasted peppers, cream, garlic, salt, pepper, and chili flakes to a blender. Purée until completely smooth and glossy.
- Warm the sauce: Heat olive oil in a wide pan over medium heat. Pour in the blended mixture and let it gently simmer for about 5 minutes to deepen the flavor.
- Combine: Add drained pasta to the pan and toss until every piece is coated. If needed, add a little reserved pasta water to loosen the sauce.
