Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves garlic, minced
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- One 10.5 oz can cream of mushroom soup
- 2 tbsp low-sodium soy sauce
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- 2 cups cooked white or brown rice
Instructions
- Warm Up the Oven
- Heat your oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray to keep everything from sticking later.
- Season & Sear the Chicken
- Sprinkle the chicken breasts with salt and pepper. Place them in a hot skillet and sear for about 5 minutes per side, just until they develop a rich golden crust.
- Cook the Aromatics
- Without washing the skillet (hello, extra flavor!), toss in the diced onion and minced garlic. Cook for roughly 3 minutes, or until they soften and smell heavenly.
- Whisk Together the Sauce
- In a mixing bowl, combine the cream of mushroom soup, chicken broth, soy sauce, paprika, and thyme. Stir until smooth and well blended.
- Assemble the Dish
- Lay the browned chicken pieces in your prepared baking dish. Pour the creamy sauce mixture over the top, making sure each piece is nicely coated.
- Bake to Perfection
- Cover the dish with foil and bake for 30–35 minutes. The chicken is done when it reaches an internal temperature of 165°F (74°C).
- Serve & Enjoy
- Spoon the tender, smothered chicken over warm cooked rice and drizzle with plenty of that flavorful gravy.
