  • 1 cup all-purpose flour
  • 2 large eggs
  • 1⁄3 cup finely grated Romano cheese
  • 1 tablespoon fresh lemon zest
  • 1⁄4 cup freshly squeezed lemon juice
  • 1⁄2 cup chicken broth
  • 1⁄4 cup dry white wine
  • 1⁄4 cup olive oil
  • Salt and pepper, to taste
  • 1⁄4 cup chopped fresh parsley
  • 4 lemon slices, for serving


Instructions

  1. Place the chicken breasts between two pieces of plastic wrap and pound them to about ½ inch thickness. This helps them cook evenly and stay tender.
  2. Season both sides of the flattened chicken with salt and pepper, then set aside while you prepare the coating.
  3. Set up three shallow dishes: one filled with flour, another holding the beaten eggs, and the third containing the Romano cheese mixed with lemon zest.
  4. Coat each piece of chicken in the flour first, tapping off any extra. Dip the floured chicken into the eggs, letting the excess drip away. Finish by pressing each breast into the cheese–zest mixture so it sticks well.
  5. Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, place the coated chicken in the pan. Cook for 4–5 minutes per side, or until the crust is golden and the chicken is cooked through. Move the chicken to a warm plate.
  6. Lower the heat to medium and pour the lemon juice, white wine, and chicken broth into the hot skillet. Use a wooden spoon to loosen the flavorful browned bits stuck to the bottom. Let the sauce bubble gently for 2–3 minutes until it thickens slightly.
  7. Return the cooked chicken to the pan and spoon the sauce over the top. Let everything warm together for another minute or two.
  8. Plate the chicken and drizzle extra sauce over each serving. Finish with chopped parsley and a lemon slice on each piece.
