**Green Goddess Dressing:**

  • 3/4 cup plain Greek yogurt (preferably whole fat)
  • 1/4 cup finely grated Parmesan cheese (about 1/2 oz.)
  • 1/4 cup packed fresh basil leaves
  • 1/4 cup packed fresh parsley leaves
  • Juice of 1 lemon
  • 1 tablespoon Champagne vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Kosher salt
  • Freshly ground black pepper

**Salad:**

  • 2 boneless (skinless chicken breasts)
  • Kosher salt
  • Freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 2 cups arugula
  • 2 cups baby kale and red leaf lettuce mix
  • 2 cups chopped romaine lettuce
  • 4 strips bacon (cooked and crumbled)
  • 1 avocado (finely chopped)
  • 1/2 cup grape tomatoes (halved)
  • 1/2 cup pickled red onions
  • 2 hard-boiled eggs (halved)


Instructions

**Green Goddess Dressing:**

  1. Blend yogurt, Parmesan, basil, parsley, lemon juice, vinegar, mustard, and honey in a food processor or blender until smooth. Season with salt and pepper.
  2. **Make Ahead:** You can make the dressing up to 3 days ahead. Just store it in an airtight container in the refrigerator.

**Salad:**

  1. Season chicken generously with salt and pepper on both sides. Heat oil in a large skillet over medium heat. Add chicken and cook, turning occasionally, until it reaches 165°F, about 8 minutes per side. Transfer to a cutting board, let it cool for 10 minutes, then slice.
  2. In a large bowl, toss arugula, kale and lettuce mix, and romaine. Add bacon, avocado, tomatoes, and onions, and toss to combine.
  3. Divide the salad between bowls, top with chicken and eggs, and drizzle with the delicious green goddess dressing. Enjoy your Panera-inspired masterpiece!
