- 1 cup chocolate chips
- 1 cup butterscotch chips
- 1 cup creamy peanut butter
- 4 cups chow mein noodles (crispy)
- 1 cup salted peanuts
Instructions
- Line a baking sheet with wax or parchment paper and set it aside.
- In a microwave-safe bowl, stir together the butterscotch chips and the peanut butter. Heat in 20–30 second bursts, stirring between each, until the mixture becomes glossy and smooth.
- In a separate bowl, melt the chocolate chips the same way—short bursts in the microwave, stirring often so it stays silky.
- Pour the warm butterscotch–peanut butter mixture over the chow mein noodles and salted peanuts. Fold gently until every noodle and nut gets coated.
- Use a spoon to portion the mixture into small mounds on the prepared sheet—aim for walnut-sized piles for easy snacking.
- Drizzle the melted chocolate over each mound for decoration and extra chocolatey goodness.
- Let the haystacks rest at room temperature until they firm up, about 30–60 minutes. If you’re in a hurry, pop the tray into the fridge to speed things along.
