  • Yield: 24 haystacks 1x

Ingredients

Scale
  • 1 cup chocolate chips
  • 1 cup butterscotch chips
  • 1 cup creamy peanut butter
  • 4 cups chow mein noodles (crispy)
  • 1 cup salted peanuts

Instructions

  1. Line a baking sheet with wax or parchment paper and set it aside.
  2. In a microwave-safe bowl, stir together the butterscotch chips and the peanut butter. Heat in 20–30 second bursts, stirring between each, until the mixture becomes glossy and smooth.
  3. In a separate bowl, melt the chocolate chips the same way—short bursts in the microwave, stirring often so it stays silky.
  4. Pour the warm butterscotch–peanut butter mixture over the chow mein noodles and salted peanuts. Fold gently until every noodle and nut gets coated.
  5. Use a spoon to portion the mixture into small mounds on the prepared sheet—aim for walnut-sized piles for easy snacking.
  6. Drizzle the melted chocolate over each mound for decoration and extra chocolatey goodness.
  7. Let the haystacks rest at room temperature until they firm up, about 30–60 minutes. If you’re in a hurry, pop the tray into the fridge to speed things along.
