Cheesy Chipotle Breakfast Sandwiches
Ingredients
- 4 brioche buns or English muffins, sourdough, toast, etc., toasted
- 6 slices of beef bacon
- 1 to 2 teaspoons of brown sugar
- 5 to 6 large eggs
- 1 tablespoon of unsalted butter
- Salt and black pepper to taste
- 4 slices of American cheese
- 1 to 2 avocados sliced
**Chipotle Sauce:**
- 3/4 cup of mayonnaise
- 1/4 cup of sour cream
- Juice of 1 lime
- 1/2 tablespoon of honey
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of chili powder
- 2 to 3 tablespoons of adobo paste
- Chipotle peppers to taste pureed into a paste for spiciness
Instructions
**Making the Chipotle Sauce:**
- Mix together mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, and adobo chipotle paste in a small bowl until smooth. Set aside.
**Cooking the Eggs, Bacon, and Buns:**
- Heat butter or oil in a pan over medium heat. Crack eggs in and cook them low and slow, scrambling and fluffing them until super fluffy. Add salt and black pepper to taste. Once cooked, remove from the pan.
- Cook bacon in a hot pan over medium heat until golden and crispy, flipping halfway through. Sprinkle with brown sugar if desired. Remove from the pan once fully cooked.
- Toast buns with butter or mayo on a pan or in a toaster.
**Assembly:**
- On each bun, layer chipotle sauce, eggs, cheese, and avocado. Enjoy warm!
Notes
You can also use Hawaiian rolls to turn these into sliders!
