They’re completely no-bake, wonderfully simple to assemble, and made with creamy Oreo filling coated in smooth dairy-free white chocolate. Add a candy scarf and a cheerful face, and you’ve got the sweetest little festive treats to share with friends and family.
Ingredients
Scale
- 150g golden Oreos (or any plain/gf biscuits you prefer)
- 60g vegan or dairy-free cream cheese
- 200g dairy-free white chocolate
- Black food gel
- Orange food gel
- Strawberry laces or soft candy strips for scarves
Instructions
- Line a baking sheet with parchment and set it aside.
- Grind the cookies in a food processor until they resemble fine crumbs. If you don’t have a machine, pop them in a bag and crush with a rolling pin.
- Transfer the crumbs to a mixing bowl and blend in the dairy-free cream cheese. You’re looking for a dough-like texture that sticks together easily when pressed.
- With clean hands, shape each snowman by rolling one 20g ball (for the body) and one 7g ball (for the head). Stack the smaller one on top of the larger one and set them on the prepared tray. Repeat until all the mixture is used.
- Freeze the shaped truffles for about 20 minutes, or until firm.
- A few minutes before removing the truffles from the freezer, melt the white chocolate. Use a microwave in short bursts or set a heatproof bowl over a pot of simmering water.
- Dip each chilled snowman into the melted chocolate. You can insert a toothpick into the bottom, or balance the truffle on a fork while spooning chocolate over the top. Let extra chocolate drip back into the bowl. If you want a thicker coating, you can dip them twice.
- Return the coated truffles to the parchment-lined tray. Because they’re cold, the chocolate will set quickly—just a few minutes back in the freezer will do.
- Once set, get the decorations ready. Tint some melted white chocolate black and orange, then transfer each color into separate piping bags or small zip-top bags.
- Pipe a tiny carrot nose with the orange chocolate, then add eyes, a smile, and buttons using the black chocolate.
- Cut strips of strawberry laces to size and wrap them gently around each snowman as a scarf. If needed, dab a dot of melted chocolate to help secure it.
- Chill the finished snowmen briefly to set the details, then they’re ready to enjoy!
Notes
- Keep these truffles stored in an airtight container in the refrigerator.
- Because they contain cream cheese, they must stay chilled until serving time.
- They taste best within four days.
