Irresistibly flaky on the outside and molten-caramel delicious on the inside, these little apple pie bombs are a total crowd favorite. Follow these easy steps and enjoy warm, gooey apple-caramel bites without making a full pie.

Apple filling

  • 2 apples, peeled and chopped into small pieces
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • Small pinch of salt
  • 1 tablespoon unsalted butter

To assemble

  • 1 can refrigerated biscuit dough (16.3 oz, standard size)
  • 8 soft caramel candies
  • 2 tablespoons melted butter
  • Cinnamon sugar (optional, for topping)


Instructions

  1. Cook the apples
    • Preheat your oven to 350°F (175°C).
    • Lightly coat a baking dish with cooking spray.
    • Warm 1 tablespoon of butter in a skillet over medium heat.
    • Add the chopped apples, brown sugar, cinnamon, and salt.
    • Let the mixture cook for about 5 minutes, stirring every so often, until the apples soften and everything becomes syrupy.
    • Take the pan off the heat and allow the filling to cool for a few minutes.
  2. Prep the biscuit dough
    • Pop open the can of biscuit dough and separate the pieces.
    • Using your hands (or a rolling pin), gently stretch and flatten each biscuit into a thin circle.
    • The goal is to make them large enough to wrap around the filling without tearing.
  3. Fill and seal
    • Scoop about 1 tablespoon of the cooled apple mixture into the center of each flattened biscuit.
    • Place a single caramel candy on top of the apples.
    • Pull the dough up around the filling and pinch it firmly so the caramel stays inside.
    • Roll the sealed dough lightly between your palms until it forms a smooth ball.
  4. Brush and bake
    • Arrange the filled dough balls seam side down in the greased baking dish.
    • Brush melted butter over the tops.
    • If you’d like, sprinkle cinnamon sugar over each one to add sweetness and crunch.
  5. Bake
    • Slide the baking dish into the oven and bake for 30–35 minutes, or until the dough becomes golden brown.
    • Carefully remove the caramel apple pie bombs from the dish and let them cool just long enough to handle — they’re best enjoyed warm.
